We've been busy



I haven't updated in forever and I feel like such a bad blogger. Truth is, I have been working to lose the baby weight (STILL!) and the weather has been pretty great (most of the time) so we've been able to get out lately. Its been nice and very refreshing. Sydney gets cabin fever worse than anyone I know. I have millions of photos to post from our park adventures but I haven't had any editing time. I am making time tomorrow. I hope. I (think) my new lens will be arriving tomorrow and I already have the camera batteries on the charger. I am also going to work on cleaning up my craft room (since Rob destroyed it when he painted) so I can use it for photoshoots. I just figured out tonight that it may be the perfect space.



So I am hoping to have a better post tomorrow.

Fat Fest

I have been celebrating my birthday this weekend/weekend. My wonderful husband and I had planned on going to The Melting Pot (yummy fondue) on Thur. but they had no reservations. Thats how good this place is. So I decided on Bob Evans. Since I have been watching what I eat I have been thinking about pancakes non stop. And I love Bob Evans since they are the only place that has gravey without meat. It was great. We spent  the rest of our baby free hours putting together the desk and shelves for my craft room. It looks amazing. Pictures to come.

Yesterday my sister took me shopping. She came over with a raspberry mocha and a bagel from Big Apple. She got me the boots I have been eyeballing for over a year. And we ate lunch. Bad things of course.

And tonight I have a birthday dinner with my whole family at the Cheesecake Factory. A night filled with avocado eggrolls, corn fritters, garlic noodles, and cheesecake. So Monday I'm starting a detox. I need it bad and after this fat fest I need to rid my body of the butter, sugar, and caffine. Rob's going to hate it.

We've been playing a lot of dollhouse

Vegetarian Beef Stew.

I made this because I was having a major snow storm soup craving and Rob decided he is anti soup because its not filling enough.
2 bags of cubed beef. I use Gardein brand. Yummy.

5 cubes of "beef" or mushroom boullion cubes dissolved in water. 1 used 1 c of mushroom broth (I was going to use it all but it was really mushroomy and I figured anti mushroom Rob would taste it) and 4 cubes of "beef" boullion dissolved in boiling water.


3 carrots, cubed
2 potatoes, cubed
1 small onion, diced
1 tea worcestershire
1 tea dried parsley
1 tea garlic minced

Throw it all in a crock pot. I cooked mine for about 6 hours. We ate it over egg noodles but you can do it without. We will add barley when we get down to just having a lot of broth.



It was delish! Rob loved it and it was filling enough for him.

Quinoa Tabbouleh Recipe

We love tabbouleh. Well, Sydney and I do. I make it with Quinoa instead of Bulgar just because we love quinoa.

1 cucumber
2 tomatoes
handful of fresh parsley
juice of 1 lemon
1 bunch of green onions
1c quinoa
pinch of salt
in the summer i add a handful of fresh mint leaves. 

Cook the quinoa. The rule of quinoa is 2c of water to 1c of quinoa. Let it simmer on low and tilt the lid on the pan.




Chop the cucumber, tomatoes, green onions, and parsley.I use my food processor to get things small enough and not take forever but you can chop everything with a knife.



Mix it all together and squeeze in the lemon juice and add in the salt. Serve cold. I put mine in a pita with some tzatziki yogurt sauce and feta cheese. So easy, healthy, and delish!

I promise its still coming.

The food post. I have pictures and recipes collected. Now its a matter of writing it.

But we've had a lot going on.

After 4 days in Intensive Care and 4 days in General Peds at Childrens Hospital it has been discovered that Sydney has a double aortic arch. Basically her heart is wrapping around her lungs. We don't have a whole lot of information yet but we do have an Echo on Wed that will hopfully tell us something.
